True, but it *is* a creature with concealment, so attacking it without something to counter that is just asking for trouble. You wouldn't fight undead without a reasonable chance to resist their level-drains etc, and you wouldn't fight creatures that petrify without an appropriate counter either. The problem probably stems from the fact that at that level you really don't have the choice of what to fight. It's either the Displacer Beasts, or the Kobolds. More variety would solve the issue. And I am completely in agreement with you there, especially with the statement about variety. The Underdark has so many different varieties of horrible beasts and stuff to kill you... Heck, it's a different world altogether down there, almost. Why limit it to the standard?

I completely agree.
I would suggest making a new cave that branches off from the one that leads to the Beetles and Kobolds. Fill it with slimes, a VERY Underdark creature (afterall, the god of slimes is from the Underdark).
Slimes move quite slowly if I remember correctly, meaning they are a good enemy for archers and mages who suffer badly at low level. If you make this type of slime highly resistant to slashing and crushing attacks it would encourage fighter-types (who most likely use those weapons) to fight the Displacer Beasts, and as they are the ones most likely to have Blind-Fight that's no problem at all. On the other hand archery/mage/and thiefy types (the ones least likely to have Blind-Fight by that level) can happily chug away at the oozes.
Oozes are also used to make alchemical and spell components (I think), so it gives the opportunity for a new collection quest in case the Beetles get overcrowded. Ooze caverns might be a nice change of scenery as well, helps break up the monotony of endless caves.

There are slimes and oozes in the UD. But they're around CR 16, with SR (!?) and stuff like that.

And they do not move all that slowly. And every time you hit them, you get squirted with some acid (not actually a big deal, but fun).
